Ingredients

0/9 ready
  • 1/4 cup quinoa
  • 1 purple corn tea bag (or 1 tablespoon dried purple corn)
  • 3/4 cup boiling water
  • 1 tablespoon honey
  • 1/4 teaspoon cinnamon
  • 2 tablespoons diced apple
  • 1 tablespoon raisins
  • 1 tablespoon chopped walnuts
  • Pinch of lime zest

The Story & Steps

Purple corn isn't just beautiful—it's packed with antioxidants and gives quinoa a subtle fruity sweetness that feels luxurious. This is what happens when ancient Andean ingredients meet modern dorm life constraints.

Preparation

  1. Rinse the quinoa thoroughly in a fine strainer to remove the bitter coating.
  2. Place the purple corn tea bag in your mug and pour in the boiling water. Let it steep for 2 minutes to create a deep purple infusion.
  3. Remove the tea bag and stir in the honey and cinnamon until dissolved.
  4. Add the rinsed quinoa, diced apple, and raisins to the purple liquid.
  5. Microwave on high for 3 minutes, stir, then microwave for another 2-3 minutes until the quinoa is tender and has absorbed most of the liquid.
  6. Let it stand for 2 minutes to finish absorbing the liquid.
  7. Top with chopped walnuts and a pinch of lime zest for brightness.

The result is something between porridge and pilaf, sweet but not cloying, with the walnuts providing crucial crunch. It works for breakfast, for a late-night study session, or for those moments when you need food that feels like a hug.
