  • 2 teaspoons salt
  • 1 tablespoon sugar
  • 1 1/2 cups warm water
  • 1/2 cup melted butter, divided
  • 1/4 cup vegetable oil
  • 2 cups labneh (strained yogurt cheese)
  • 3 tablespoons honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1 tablespoon orange blossom water
  • 2 tablespoons pistachios, chopped
  • Olive oil for cooking

The Story & Steps

Msemen is a beloved North African flatbread characterized by its unique folding technique that creates dozens of flaky layers. While often served plain or with jam, this version elevates it with spiced labneh—a sophisticated spread that transforms the bread into something special without overwhelming its delicate butteriness.

Make the Dough

  1. In a large bowl, combine both flours, salt, and sugar.
  2. Gradually add warm water, mixing until a soft dough forms.
  3. Knead for 10 minutes until smooth and elastic.
  4. Divide into 8 equal balls and coat each lightly with oil.
  5. Cover with plastic wrap and rest for 30 minutes.

Shape the Msemen

  1. Mix 1/4 cup melted butter with vegetable oil in a small bowl.
  2. On an oiled surface, flatten one dough ball with oiled hands, stretching it into a very thin square (almost transparent).
  3. Brush generously with the butter-oil mixture.
  4. Fold into thirds like a letter, then fold again perpendicular to create a small square.
  5. Gently flatten the square with your palm.
  6. Repeat with remaining dough balls.

Cook the Flatbreads

  1. Heat a griddle or large skillet over medium heat.
  2. Brush lightly with olive oil.
  3. Cook each msemen for 3-4 minutes per side until golden brown and crispy.
  4. Keep warm wrapped in a clean towel.

Prepare the Labneh

  1. In a bowl, mix labneh with honey, cinnamon, cardamom, and orange blossom water.
  2. Taste and adjust honey to preference.
  3. Transfer to a serving bowl and drizzle with remaining melted butter.
  4. Sprinkle with chopped pistachios.

Serving

Serve warm msemen alongside the bowl of spiced labneh. Tear pieces of the flatbread and use them to scoop the creamy spread. This is excellent with mint tea on the side.
