The presentation is dramatic: a mound of thick porridge with a well in the center, filled with fiery spiced butter that guests mix in according to their heat tolerance.

Berbere, Ethiopia's signature spice blend, transforms simple porridge into something exciting and complex. The combination of warming spices with rich butter and hearty grain creates a breakfast that's as satisfying psychologically as it is nutritionally.

Preparation

  1. Bring water and salt to a boil in a heavy-bottomed pot.
  2. Reduce heat to medium-low and gradually add the flour, stirring constantly with a wooden spoon to prevent lumps.
  3. Continue stirring vigorously for 10-15 minutes. The mixture will become very thick and pull away from the sides of the pot.
  4. The porridge is ready when it forms a smooth, dense mass and no longer tastes raw.
