Ingredients

0/10 ready
  • 1 packet instant ramen noodles
  • 1½ cups vegetable or chicken stock
  • 1 tablespoon white miso paste
  • 1 teaspoon sesame oil
  • 1 egg
  • 2 tablespoons corn kernels (frozen is fine)
  • 3-4 slices narutomaki or kamaboko fish cake (optional)
  • 1 green onion, thinly sliced
  • ½ sheet nori seaweed
  • ¼ teaspoon chili oil or togarashi

The Story & Steps

There's something deeply comforting about a steaming bowl of ramen at any hour, but especially when you're cooking just for yourself and want something that feels like a proper meal. This version ditches the hours of simmering bones while keeping all the satisfaction.

Preparation

  1. Bring the stock to a boil in a small pot. While it heats, whisk the miso paste with 2 tablespoons of warm water in a small bowl until smooth.
  2. Once boiling, add the corn kernels and cook for 1 minute. Add the ramen noodles (discarding the seasoning packet) and cook according to package directions, usually 3 minutes.
  3. While noodles cook, bring a separate small pot of water to a simmer. Carefully lower the egg in and cook for exactly 6½ minutes for a jammy yolk. Immediately transfer to ice water.
  4. When noodles are done, remove pot from heat and stir in the miso mixture and sesame oil. Taste and adjust seasoning.
  5. Pour everything into your serving bowl. Peel and halve the egg, placing it on top along with the fish cake slices, green onion, torn nori, and a drizzle of chili oil.

The key to this recipe's success is the miso enrichment—it transforms basic stock into something with genuine complexity. Each spoonful should taste layered, savory, just a bit sweet, with that characteristic miso earthiness cutting through.
