This bowl came to me in a fever dream of carbs and butter, and I've been making variations of it ever since. The key is cooking the grits and bulgur separately, then combining them—each grain keeps its distinct texture and personality.

The Grain Game

  1. Bring 1 cup of water to a boil in a small pot. Add the grits and a pinch of salt, reduce heat to low, and cook for 20-25 minutes, stirring occasionally, until creamy.
  2. Meanwhile, place the bulgur in a small bowl with 1/2 cup boiling water and a pinch of salt. Cover and let sit for 15 minutes until tender and fluffy.
  3. While your grains cook, make the spiced honey butter: melt the butter in a small pan, then whisk in the honey, Urfa biber, and smoked paprika. Keep warm.
  4. Prepare your soft-boiled egg: 6.5 minutes in boiling water, then into an ice bath.
  5. Toast the pine nuts in a dry pan until golden and fragrant.
  6. When the grits are ready, gently fold in the cooked bulgur, creating a marbled effect rather than fully mixing.
  7. Transfer to a shallow bowl, top with the halved soft-boiled egg, drizzle generously with spiced honey butter, and scatter with pine nuts and chives.
