  • 2 ounces ground lamb
  • 2 tablespoons onion, minced
  • 1 tablespoon tomato paste
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cinnamon
  • Pinch of cayenne
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley
  • 1 tablespoon crumbled feta
  • Lemon wedge
  • Salt and black pepper

The Story & Steps

I invented this at 11 PM after a long day when I wanted both eggs and something with bold flavors. The lahmacun filling—usually spread on flatbread—becomes the perfect savory center for a fluffy omelet. It sounds chaotic, but it's genius.

Late Night Genius

  1. First, make the lahmacun filling: in a small skillet over medium-high heat, cook the ground lamb until browned. Add the onion and cook until softened.
  2. Stir in tomato paste, cumin, cinnamon, cayenne, salt, and pepper. Cook for 2-3 minutes until the mixture is fragrant and relatively dry. Remove from heat.
  3. Whisk the eggs with milk, salt, and pepper until frothy.
  4. Melt butter in a non-stick skillet over medium heat until it just stops foaming.
  5. Pour in the eggs and let them sit for 30 seconds. Using a spatula, gently push the edges toward the center, tilting the pan to let uncooked egg flow to the edges.
  6. When the eggs are mostly set but still slightly wet on top, spoon the lahmacun mixture down the center.
  7. Using your spatula, fold one third of the omelet over the filling, then fold the other third over that.
  8. Slide onto a plate, top with fresh parsley and crumbled feta, and serve with a lemon wedge.

Timing Tip: Make extra lahmacun filling and keep it in the fridge. It's also excellent on toast, in a wrap, or mixed into scrambled eggs.
