Ingredients

0/12 ready
  • ⅔ cup cooked jasmine rice (preferably day-old)
  • 2 cups chicken or pork stock
  • 100g ground pork
  • 2 cloves garlic, minced
  • 1 tablespoon fish sauce
  • ½ teaspoon white pepper
  • 1-inch piece fresh ginger, cut into matchsticks
  • 1 egg
  • 2 tablespoons chopped cilantro
  • 1 green onion, sliced
  • Fried garlic (optional)
  • Lime wedge

The Story & Steps

In Thailand, khao tom is what you eat when you need comfort—after a late night, before an early morning, or simply when you want something gentle and warming. This solo version respects the original's simplicity while giving you a complete, nourishing meal from a single pot.

Preparation

  1. Bring the stock to a simmer in a small saucepan over medium heat. Add the minced garlic and ginger matchsticks, letting them perfume the broth for 2 minutes.
  2. Add the ground pork, breaking it up with a spoon as it cooks. Let it simmer for 3-4 minutes until cooked through.
  3. Stir in the cooked rice, fish sauce, and white pepper. Let everything heat through for 2 minutes—the rice will start to break down slightly, thickening the soup.
  4. Create a small whirlpool in the soup with your spoon, then crack the egg into the center. Let it poach gently for 2-3 minutes, or until cooked to your liking.
  5. Pour into your bowl and top with cilantro, green onion, and fried garlic if using. Serve with a lime wedge on the side to squeeze over top.
  6. Eat slowly, letting each spoonful warm you from the inside out.
