  • ½ cup sushi rice
  • ¾ cup water
  • 1 tablespoon rice vinegar
  • ½ teaspoon sugar
  • 3 oz sushi-grade salmon or tuna, cubed
  • ½ avocado, sliced
  • ¼ cucumber, julienned
  • 1 tablespoon pickled ginger
  • 1 tablespoon soy sauce
  • ½ teaspoon sesame oil
  • 1 teaspoon sesame seeds
  • ½ sheet nori, cut into strips
  • Sriracha mayo for drizzling

The Story & Steps

The restaurant version comes with expectations and small plates. Your version comes together in one bowl, eaten with chopsticks or a fork (no judgment), while you watch exactly what you want on TV.

Instructions

  1. Rinse sushi rice until water runs clear. Cook with water according to package directions (or rice cooker).
  2. While rice cooks, mix rice vinegar and sugar in a small bowl until sugar dissolves.
  3. When rice is done, transfer to a bowl and gently fold in the vinegar mixture. Let cool to room temperature.
  4. Meanwhile, prep your toppings: cube the fish, slice the avocado, julienne the cucumber.
  5. In a small bowl, mix soy sauce and sesame oil for your dressing.
  6. In your serving bowl, add the seasoned rice as the base.
  7. Arrange fish, avocado, cucumber, and pickled ginger in sections on top of the rice.
  8. Drizzle with soy-sesame dressing and sriracha mayo.
  9. Top with sesame seeds and nori strips.
