Preparation

  1. Slice the eggplants lengthwise into 1/4-inch thick slices. Sprinkle with salt and let sit for 10 minutes.

  4. Add the cilantro, parsley, and water. Process until you have a thick, spreadable paste. Add more water if needed. Taste and adjust seasoning.
  5. Lay an eggplant slice flat and place 1-2 tablespoons of walnut paste at one end. Roll up tightly.
  6. Arrange rolls seam-side down on a serving platter. Garnish with pomegranate seeds if using. Serve at room temperature.
