Ingredients

0/9 ready
  • 200g dried udon noodles
  • 2 tablespoons white or yellow miso paste
  • 3 tablespoons butter
  • 2 cups frozen mixed vegetables
  • 3 cups water
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Optional: sesame seeds for garnish

The Story & Steps

Cooking without limits means embracing what you have rather than what a recipe demands. This udon dish proves that frozen vegetables and pantry ingredients can create something deeply satisfying with minimal effort and just one pot to clean.

Preparation:

  1. Bring the water to a boil in a large pot over high heat.
  2. Add the frozen vegetables directly from the freezer and the dried udon noodles. Cook according to the udon package directions, usually 8-10 minutes, stirring occasionally.
  3. While the noodles cook, mix the miso paste with 3 tablespoons of the hot cooking water in a small bowl until smooth.
  4. When the noodles are tender, reduce heat to low. Add the butter, dissolved miso mixture, soy sauce, garlic powder, and black pepper.
  5. Stir everything together for 1-2 minutes until the butter melts and creates a glossy sauce.
  6. Taste and adjust seasoning if needed. Serve immediately, garnished with sesame seeds if desired.

Kitchen tip: If the sauce seems too thick, add a splash more water. Too thin? Let it simmer for another minute or two.
