Ingredients

0/10 ready
  • 8 sheets phyllo dough, thawed
  • 1/2 cup butter, melted
  • 1 cup mixed nuts (pistachios, walnuts, almonds), finely chopped
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/2 cup honey
  • 2 tablespoons water
  • 1 teaspoon rose water
  • 1 tablespoon lemon juice

The Story & Steps

Traditional baklava is precise, geometric, layered with military precision. This version embraces chaos. We're breaking every rule—shattering the phyllo into irregular pieces, crisping them separately, then reassembling with honey and nuts. The air fryer ensures every surface gets equally golden, something nearly impossible in a conventional oven.

Preparation Steps

  1. Brush one sheet of phyllo with melted butter. Top with another sheet and brush again. Repeat until you have 4 stacks of 2 sheets each.
  2. Using kitchen shears, cut each stack into random, irregular triangular shards of various sizes—think abstract art, not geometry.
  3. Arrange shards in a single layer in the air fryer basket. Work in batches if necessary.
  4. Air fry at 320°F for 5-7 minutes until golden brown and crispy. They should look like glass and shatter easily.
  5. Mix chopped nuts with sugar, cinnamon, and cardamom. Spread on a plate.
  6. In a small saucepan, heat honey, water, rose water, and lemon juice until just simmering. Remove from heat.
  7. Working quickly, dip each phyllo shard halfway into the honey syrup, then press the dipped end into the nut mixture.
  8. Stand the shards upright on a serving platter, creating a forest of baklava shards.

The beauty is in the imperfection—each shard is unique, some with more nuts, some with more honey. Eating instructions: Pick up a shard and experience the full trajectory from crispy phyllo to honey-soaked nuts to crispy tip. The textural journey is the point. This is baklava as performance art, and the air fryer made it possible.
