  • 2 cans chickpeas (15 oz each), drained and completely dried
  • 3 tablespoons za'atar spice blend
  • 1 teaspoon flaky sea salt
  • 1/2 teaspoon MSG (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons finely minced preserved lemon
  • 1 garlic clove, grated
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

The Story & Steps

Most air-fried chickpea recipes stop at 'crunchy.' We're going further—to hollow, puffed, almost ethereal spheres that dissolve on the tongue while delivering maximum za'atar flavor.

Preparation

  1. After draining chickpeas, spread them on paper towels and pat aggressively. Any moisture is the enemy of puffing.
  2. Let chickpeas air-dry for 30 minutes, or speed the process by gently rolling them between towels.
  3. Toss dried chickpeas in air fryer basket and cook at 390°F for 22-25 minutes, shaking every 5 minutes, until they sound hollow when tapped.
  4. While still hot, toss with za'atar, sea salt, and MSG if using. The residual heat will toast the spices.
  5. Make aioli by combining mayonnaise, minced preserved lemon, grated garlic, and lemon juice. The preserved lemon adds both salt and funk.
  6. Serve chickpea puffs in a bowl with aioli alongside, garnished with fresh parsley.

Why They Puff

Extended air frying at moderate heat allows moisture inside each chickpea to convert to steam. When the exterior sets into a crispy shell, the steam has nowhere to go, creating pressure that results in a hollow, puffed center. It's the same principle behind popcorn, just with legumes.
