Ingredients

0/7 ready
  • 1 large taro root (about 1 pound), peeled
  • 2 tablespoons white miso paste
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil
  • 2 tablespoons furikake seasoning
  • 1 tablespoon neutral oil
  • 1/2 teaspoon sugar

The Story & Steps

Taro root, a starchy staple across Polynesia, Asia, and Africa, transforms into something extraordinary when subjected to the air fryer's alchemical heat. Unlike potato chips, taro offers a nuttier, slightly sweeter base that pairs beautifully with fermented miso.

Preparation:

  1. Slice the peeled taro root paper-thin using a mandoline (about 1/16 inch thick). Soak slices in cold water for 10 minutes to remove excess starch, then pat completely dry with paper towels.
  2. In a large bowl, whisk together miso paste, mirin, sesame oil, neutral oil, and sugar until smooth. This is your umami bomb.
  3. Toss the dried taro slices gently in the miso mixture, ensuring each slice gets a thin, even coating.
  4. Arrange slices in a single layer in your air fryer basket (work in batches to avoid overlap).
  5. Air fry at 350°F for 8-10 minutes, shaking the basket every 3 minutes. Watch carefully in the final minutes—they'll go from golden to burnt quickly.
  6. When the edges curl and turn deep golden brown, remove and immediately sprinkle with furikake while still hot.
  7. Let cool for 2 minutes to achieve maximum crispness. The chips will continue to crisp as they cool.

Storage tip: These are best eaten within a few hours, but you can store them in an airtight container with a silica packet for up to 2 days.
