  • 8 baby eggplants (3-4 inches long)
  • 1 cup cooked chickpeas, roughly mashed
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons fresh ginger, grated
  • Salt to taste
  • 2 tablespoons tamarind concentrate
  • 1 tablespoon jaggery or brown sugar
  • 3 tablespoons warm water
  • Fresh cilantro for garnish
  • Cooking spray

The Story & Steps

Baby eggplants have thin, delicate skins that become wonderfully crispy when exposed to dry heat. Slitting them lengthwise and stuffing them creates pockets of spiced filling that stay moist while the exterior crisps.

Preparation

  1. Make a lengthwise slit in each eggplant, cutting three-quarters through but keeping the stem end intact.
  2. Gently open each eggplant and sprinkle the inside with salt. Let sit for 15 minutes to draw out moisture.
  3. Meanwhile, combine mashed chickpeas, garam masala, coriander, cumin, turmeric, cayenne, ginger, and salt.
  4. Pat eggplant cavities dry with paper towels.
  5. Stuff each eggplant generously with the chickpea mixture, pressing to pack it in.
  6. Spray stuffed eggplants lightly with cooking spray on all sides.
  7. Preheat air fryer to 360°F (182°C).
  8. Place eggplants in the basket, stuffing side up, and air fry for 12 minutes.
  9. Increase temperature to 400°F (200°C) and cook another 8-10 minutes until skins are wrinkled and crispy.
  10. Whisk together tamarind concentrate, jaggery, and warm water until smooth.
  11. Drizzle tamarind sauce over finished eggplants and garnish with cilantro.

The eggplants emerge collapsed and crispy, their flesh silky and infused with spices, while the chickpea filling provides textural contrast. That sweet-sour tamarind drizzle ties everything together with a tangy flourish.
