Ingredients

0/9 ready
  • 1 package instant ramen noodles
  • 2 tablespoons coconut milk powder
  • 1 teaspoon curry powder
  • 1/2 teaspoon fish sauce or soy sauce
  • 1 teaspoon lime juice
  • 1 tablespoon peanut butter
  • Handful of frozen peas or corn
  • Crushed peanuts for garnish (optional)
  • Hot water

The Story & Steps

There's a moment in every college student's life when they realize the seasoning packet is a suggestion, not a law. This is that awakening in edible form.

By ditching the sodium bomb that comes with your ramen and building your own Southeast Asian-inspired broth, you're basically getting a culinary degree one mug at a time. The peanut butter melts into the coconut milk creating a creamy, rich base that makes the noodles taste like they cost more than $0.35.

Instructions

  1. Place your ramen noodles in the mug and add the frozen vegetables on top.
  2. Pour boiling water over the noodles until the mug is about 3/4 full. Let sit for 3 minutes.
  3. While waiting, mix the coconut milk powder, curry powder, fish sauce, lime juice, and peanut butter in a small bowl with a splash of hot water to create a paste.
  4. After the noodles have softened, drain about half the water (leave enough to create a brothy consistency).
  5. Stir in your curry paste mixture until everything is well combined and creamy.
  6. Microwave for 30 seconds if needed to ensure everything is hot.
  7. Top with crushed peanuts if you're feeling fancy. Eat directly from the mug while contemplating how you've just hacked the system.
