  • 8 oz block feta cheese, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 3 tablespoons za'atar
  • For hot honey: 1/4 cup honey, 1 teaspoon red pepper flakes, 1 tablespoon warm water

The Story & Steps

Feta in its natural state is crumbly and salty. Coat it in za'atar-spiked breadcrumbs and blast it with hot air, and it becomes something else entirely—a crispy-crusted nugget with an interior that's gone soft and creamy without completely melting away.

The Three-Step Coating

  1. Place feta cubes in freezer for 15 minutes (this helps them hold their shape).
  2. Set up breading station: flour, beaten eggs, and panko mixed with za'atar.
  3. Working quickly, coat each cube in flour, then egg, then panko mixture, pressing firmly.
  4. Place breaded cubes back in freezer for 10 minutes while air fryer preheats to 400°F.

The Final Cook

  1. Spray breaded feta lightly with oil on all sides.
  2. Air fry for 6 minutes without moving.
  3. Flip carefully and cook another 4-5 minutes until deeply golden.

For the hot honey, warm honey with red pepper flakes and water until combined. Drizzle over the hot feta bites immediately—the combination of salty, herbal, creamy, crispy, sweet, and spicy is pure alchemy.
