  • 2 tablespoons fresh chives, chopped
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • Cooking spray
  • 6 small squares of parchment paper

The Story & Steps

This recipe was born from a happy accident when prosciutto and eggs collided in the air fryer basket. The circulating hot air creates something magical: the prosciutto crisps into a spiraling, tornado-like structure while the egg sets into a perfect, portable package with a molten center.

Preparation Steps

  1. Cut six 4-inch squares of parchment paper and spray lightly with cooking spray.
  2. For each tornado, take two slices of prosciutto and arrange them in an X pattern on your work surface.
  3. Place a parchment square in the center of the prosciutto X. Crack one egg onto the parchment.
  4. Sprinkle the egg with a bit of Gruyere, chives, pepper, and paprika.
  5. Carefully gather the prosciutto up and around the egg, twisting gently at the top to create a spiral effect. The parchment will help maintain the shape.
  6. Place the wrapped eggs (parchment and all) in the air fryer basket, twisted-top facing up.
  7. Air fry at 320°F for 12-14 minutes for a jammy yolk, or 15-17 minutes for a fully set yolk.
  8. The prosciutto should be crispy and the cheese melted and bubbling.

The Science: The parchment prevents the egg from leaking while allowing the prosciutto to crisp. As the egg cooks and expands, it pushes against the meat, creating the tornado shape. Remove the parchment before serving, but work quickly—these are best enjoyed hot with the contrast between crispy meat and creamy egg at its peak.
