  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 cup fresh Thai basil leaves
  • 2 tablespoons neutral oil
  • 1 red chili, thinly sliced
  • Lime zest for finishing

The Story & Steps

This recipe was born from a craving for something crunchy and bright. The air fryer concentrates the cauliflower's natural sweetness while creating edges that are almost burnt—in the best possible way—and deeply caramelized.

Building Flavor:

  1. Toss cauliflower florets with oil until evenly coated.
  2. Air fry at 400°F for 12 minutes, shaking the basket twice during cooking.
  3. Meanwhile, whisk together fish sauce, lime juice, brown sugar, and garlic.
  4. When cauliflower is golden and crispy at the edges, transfer to a large bowl.
  5. Pour the sauce over hot cauliflower and toss vigorously to coat.
  6. Return to air fryer for 3 more minutes to caramelize the sauce.
  7. Toss with torn Thai basil leaves, sliced chili, and fresh lime zest.

Note: The basil should be added at the very end so it stays fresh and aromatic, providing a burst of herbal flavor against the caramelized, tangy cauliflower.
