  • 1/2 cup date syrup
  • 2 tablespoons butter
  • 1/4 teaspoon sea salt

The Story & Steps

This recipe came to me after falling in love with date syrup at a local market. Combined with tahini's earthiness, it creates a caramel unlike anything you've tasted—nutty, complex, and impossible to resist.

Preparation

  1. In a large skillet, melt the butter over medium heat until it begins to foam gently.
  2. Add the tahini, date syrup, and sea salt to the pan, whisking continuously until the mixture becomes smooth and glossy (about 1 minute).
  3. Place the banana halves cut-side down in the pan and cook for 2-3 minutes without moving them, allowing them to caramelize.
  4. Carefully flip the bananas and cook for another 2 minutes until golden and softened but still holding their shape.
  5. Remove from heat and serve immediately, drizzling any remaining caramel from the pan over the top.

Incredible over vanilla ice cream, stirred into yogurt, or simply eaten warm with a fork straight from the pan (no judgment here).
