  • 1 cup heavy cream
  • 1/2 cup sugar
  • Pinch of salt
  • 1 1/2 cups granola or toasted oats
  • 1 cup fresh or frozen lingonberries (or substitute cranberries)
  • 2 tablespoons honey
  • 1/4 cup toasted almonds, chopped
  • Fresh mint leaves for garnish

The Story & Steps

In Sweden, filmjölk is as common as yogurt is elsewhere—a thick, tangy fermented milk product eaten for breakfast year-round. Paired with messmör, a traditional whey butter caramel, it creates the kind of breakfast that feels both virtuous and indulgent. The contrast between cool, sour dairy and warm, sweet caramel is quintessentially Nordic.

Making the Messmör

  1. In a heavy-bottomed saucepan, combine heavy cream, sugar, and salt. Bring to a boil over medium heat, stirring constantly.
  2. Once boiling, reduce heat to medium-low and continue cooking, stirring frequently, for 30-40 minutes. The mixture will reduce, darken to a deep golden brown, and develop a caramel flavor. Watch carefully toward the end to prevent burning.
  3. When it reaches a thick, spreadable consistency and rich caramel color, remove from heat and let cool slightly. It will thicken more as it cools.

Assembly

  1. If using fresh cranberries as a lingonberry substitute, simmer them with honey and a splash of water for 5 minutes until they burst and form a compote. Let cool.
  2. Divide filmjölk among four bowls. Top each with a generous spoonful of messmör, granola, lingonberries or cranberry compote, toasted almonds, and fresh mint.
