  • 1 cup corn kernels (fresh, frozen, or canned and drained)
  • ½ cup flour
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper or cayenne
  • 2 scallions, chopped
  • Oil for frying

The Story & Steps

Fritters across cultures share the same appeal: crispy outside, tender inside, infinitely adaptable. This batter is thick enough to hold together but loose enough that you don't need to form patties—just drop and cook.

Preparation

  1. Mix flour, baking powder, salt, and pepper in a bowl.
  2. In another bowl, whisk egg and milk together.
  3. Pour wet ingredients into dry and stir until just combined.
  4. Fold in corn and scallions—batter will be thick and chunky.
  5. Heat ¼ inch of oil in a skillet over medium heat until shimmering.
  6. Drop heaping tablespoons of batter into oil, spacing them apart.
  7. Cook without touching for 3-4 minutes until edges are golden.
  8. Flip once and cook another 2-3 minutes.
  9. Remove to paper towels and sprinkle with extra salt immediately.

These are endlessly variable. Add cheese, swap corn for zucchini, stir in herbs, or spike with hot sauce. Serve with sour cream, hot sauce, or eat them plain as a snack.
