Ingredients

0/14 ready
  • 1 cup arborio rice
  • 4 cups whole milk
  • 1 cup heavy cream
  • 2/3 cup sugar
  • Large pinch of saffron threads
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • Pinch of cayenne pepper
  • 2 teaspoons vanilla extract
  • 1/4 cup pistachios, chopped
  • 2 tablespoons dried rose petals
  • Orange zest for garnish
  • Gold leaf for garnish (optional)

The Story & Steps

In Frank Herbert's Dune, melange spice is the most valuable substance in the universe—it extends life, expands consciousness, and makes space travel possible. Found only on the desert planet Arrakis, it has a distinctive cinnamon-like flavor. While we can't promise expanded consciousness, this luxurious rice pudding captures the exotic, complex flavor profile Herbert described, with warm spices and precious saffron that evokes the desert's golden sand.

Preparation

  1. Crush the saffron threads slightly and steep them in 2 tablespoons of warm milk for 10 minutes.
  2. In a large, heavy-bottomed pot, combine rice, milk, cream, and sugar.
  3. Bring to a gentle simmer over medium heat, stirring frequently to prevent sticking.
  4. Add the saffron with its steeping milk, cardamom, cinnamon, ginger, and cayenne.
  5. Reduce heat to low and cook, stirring often, for 35-45 minutes until the rice is very tender and the mixture is creamy.
  6. Remove from heat and stir in vanilla extract.
  7. Let cool slightly, then transfer to serving bowls.

Serving

Serve warm or chilled, topped with chopped pistachios, dried rose petals, and fresh orange zest. For extra drama worthy of the God Emperor himself, add a small piece of edible gold leaf to each serving.

The spice must flow—into your dessert bowl. The complex layering of warm spices with floral notes creates an otherworldly experience, a small taste of what makes melange worth fighting for across the galaxy.
