Ingredients

0/12 ready
  • 1 medium purple potato (or any small potato), diced into 1/2-inch cubes
  • 2 tablespoons water
  • 1/4 cup canned black beans (drained and rinsed)
  • 2 tablespoons frozen peas or corn
  • 2 tablespoons mayonnaise or Greek yogurt
  • 1 teaspoon lime juice
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper (or more to taste)
  • Salt and pepper to taste
  • 1 tablespoon crumbled feta or cotija cheese
  • Chopped fresh cilantro (optional)

The Story & Steps

Purple potatoes aren't just Instagram-worthy—they're packed with antioxidants and have a naturally buttery, earthy flavor. But if you can't find them, any potato will work beautifully in this Peruvian-inspired creation that brings the spirit of Lima's street food to your dorm room.

Preparation

  1. Place the diced potato in your microwave-safe mug with 2 tablespoons of water.
  2. Cover the mug with a microwave-safe plate or damp paper towel.
  3. Microwave on high for 3 minutes.
  4. Carefully remove and check if potatoes are fork-tender. If not, microwave in 1-minute increments until soft.
  5. Drain any excess water from the mug.
  6. Add the black beans and frozen peas/corn to the mug with the potatoes.
  7. Microwave uncovered for 1 minute to heat through.
  8. While that's heating, mix together the mayonnaise, lime juice, cumin, paprika, and cayenne in a small bowl or cup to create your ají-style sauce.
  9. Pour the sauce over the potato mixture and stir gently to combine.
  10. Season with salt and pepper to taste.
  11. Top with crumbled cheese and cilantro if using.

This dish is endlessly customizable: add a fried egg on top for extra protein, swap the beans for chickpeas, or add hot sauce for more heat. The creamy, tangy sauce is what makes it special.
