Congee is patience in a bowl—rice breaking down slowly into something that's more than the sum of its parts. For one person cooking at their own pace, it's meditative, forgiving, and endlessly adaptable. This version adds textural contrast with crispy shallots and a jammy egg that you can break into the porridge.

Preparation

  1. Rinse the rice briefly under cold water. Place it in a small pot with the stock and ginger slices. Bring to a boil.
  2. Reduce heat to low and simmer, uncovered, for about 45-50 minutes, stirring occasionally. The rice should completely break down into a creamy porridge. Add more water if it gets too thick—you want a consistency that flows slowly off the spoon.
  3. While the congee cooks, prepare your egg: Marinate a peeled soft-boiled egg in soy sauce and sesame oil for at least 20 minutes, turning occasionally.
  4. Make crispy shallots: Heat neutral oil in a small pan over medium heat. Add sliced shallots and fry, stirring frequently, until golden brown and crisp (about 4-5 minutes). Drain on paper towels.
  5. Remove the ginger slices from the congee. Season with white pepper and additional soy sauce if needed.
  6. Pour into a bowl and top with the marinated egg (halved), crispy shallots, green onions, and a spoonful of chili crisp if you like heat. Stir everything together as you eat, letting the egg yolk enrich the porridge.
