Halloumi is already known for its high melting point and satisfying squeak, but coating it in spiced breadcrumbs and air frying it elevates this Cypriot cheese into something that transcends its humble origins. The Persian spice blend—warmth without heat—plays beautifully against the salty cheese and tart-sweet pomegranate.

Assembly Line Approach

  1. Pat halloumi batons completely dry with paper towels. Any moisture will prevent the coating from adhering.
  2. Set up three shallow bowls: one with flour mixed with cardamom, cinnamon, and pepper; one with beaten eggs; and one with panko mixed with chopped pistachios.
  3. Dredge each halloumi baton in spiced flour, shaking off excess.
  4. Dip in egg, letting excess drip off.
  5. Press firmly into the panko-pistachio mixture, ensuring complete coverage on all sides.
  6. Place coated fries on a plate and refrigerate for 15 minutes. This helps the coating adhere during cooking.
  7. Preheat air fryer to 390°F (199°C).
  8. Arrange fries in a single layer and spray generously with cooking oil.
  9. Air fry for 8 minutes, then carefully flip each fry and spray again.
  10. Continue cooking for 6-7 more minutes until the exterior is deeply golden and crunchy.
  11. While fries cook, whisk pomegranate molasses with rose water.

Transfer hot fries to a serving platter immediately—timing is everything with halloumi. Drizzle with the pomegranate-rose water syrup, scatter with fresh pomegranate arils and torn mint leaves.
