Indian street food meets air fryer efficiency in these spiced cheese fritters. The traditional chickpea flour coating achieves impossible crispness with hot air alone.

Ingredients

0/9 ready
  • 8 oz paneer, cut into 1-inch cubes
  • 1 cup chickpea flour (besan)
  • 1 teaspoon carom seeds (ajwain)
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon red chili powder
  • 1/2 cup water (approximately)
  • Salt to taste
  • For chutney: 1 cup mint leaves, 1 cup cilantro, 1 green chili, 2 tablespoons lemon juice, 1/4 cup yogurt, salt

The Story & Steps

Pakoras are traditionally deep-fried, but the air fryer produces a coating that's somehow even crispier—with that distinctive chickpea flour flavor intensified by the dry heat. These nuggets are proof that you don't need gallons of oil for that perfect crunch.

The Batter

  1. Mix chickpea flour with all spices and salt.
  2. Add water gradually, whisking to create a thick batter that coats the back of a spoon.
  3. Let rest for 10 minutes to allow the flour to hydrate.

Coating and Cooking

  1. Pat paneer cubes dry, then dip each in batter to coat completely.
  2. Place coated pieces in air fryer basket, ensuring they don't touch.
  3. Spray lightly with oil.
  4. Air fry at 375°F for 8 minutes, flip, spray again, and cook 6-7 more minutes until deep golden.

The Chutney

Blend all chutney ingredients until smooth, adding water if needed to reach desired consistency. The cool, herbal chutney is the perfect foil for the hot, spiced pakoras.
