  • 2 tablespoons gin

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Fold in all three citrus zests into the butter mixture.
  6. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.

  8. While cake bakes, combine all three citrus juices with gin and a few drops of yellow food coloring in a small saucepan. Heat gently and stir in powdered sugar until dissolved.
