The Story & Steps

Ayran is Turkey's most popular drink—a savory, refreshing yogurt beverage that's served with nearly every meal. While traditionally whisked, this jar-shaking method is easier, faster, and somehow more fun.

The Shake Method

  1. Find a jar or container with a tight-fitting lid (a quart-sized mason jar works perfectly).
  2. Add yogurt to the jar. Use any plain yogurt you have—Greek yogurt, regular yogurt, even dairy-free yogurt works.
  3. Add cold water and salt. The salt is essential—it might seem weird in a drink, but it makes the flavor pop.
  4. Secure the lid tightly. Hold the jar with both hands and shake vigorously for 30 seconds. You want to see it become frothy and lighter in color.
  5. Add a handful of ice cubes, replace the lid, and shake for another 10 seconds to chill.
  6. Pour into glasses. The drink should be frothy on top and smooth below.
  7. Garnish with fresh mint or a pinch of dried mint if desired.

Ayran is incredibly refreshing with spicy foods, grilled meats, or on hot days. It's also wonderfully hydrating and full of probiotics. Once you start making it, you'll understand why Turkish people drink it with everything.
