Ingredients

0/5 ready
  • 1 pound halloumi cheese
  • 3 tablespoons honey
  • 2 tablespoons harissa paste
  • 2 tablespoons olive oil
  • 1 lemon

The Story & Steps

Halloumi's legendary ability to hold its shape under heat makes it the perfect candidate for this flavor-packed treatment. The marriage of North African harissa and honey creates a glaze that's simultaneously fiery and soothing, while a squeeze of lemon cuts through the richness at the end.

Preparation

  1. Cut the halloumi into 3/4-inch cubes and pat them completely dry with paper towels (this helps achieve maximum crispiness).
  2. In a small bowl, whisk together the honey and harissa paste until well combined. Set aside.
  3. Heat the olive oil in a large non-stick skillet over medium-high heat until shimmering.
  4. Add the halloumi cubes in a single layer (work in batches if needed) and cook without moving for 2-3 minutes until deeply golden on the bottom.
  5. Flip each cube and cook for another 2 minutes until golden on all sides.
  6. Reduce heat to low, pour the harissa-honey mixture over the cheese, and toss gently to coat. Cook for 30 seconds, stirring, until the glaze thickens and clings to the cheese.
  7. Transfer to a serving plate immediately and squeeze fresh lemon juice over the top.
  8. Serve hot with toothpicks. Warning: these disappear fast.
