  • 3 ripe saba bananas (or regular bananas), sliced lengthwise
  • 6 tablespoons brown sugar
  • 1/2 cup jackfruit, sliced into strips
  • 12 spring roll wrappers
  • 1 egg, beaten
  • Cooking spray
  • 1/4 cup ube halaya (purple yam jam)
  • 2 tablespoons condensed milk
  • 1 tablespoon warm water

The Story & Steps

Turon is a beloved Filipino snack typically deep-fried until the sugar caramelizes into a crackling shell. The air fryer achieves similar results with a fraction of the oil, while the addition of an ube drizzle pays homage to the Philippines' love affair with purple yam.

Preparation

  1. Roll banana slices in brown sugar, coating all sides generously. Let sit for 5 minutes to allow the sugar to stick.
  2. Place a spring roll wrapper on a clean surface with one corner pointing toward you (diamond orientation).
  3. Place one sugared banana slice and a few jackfruit strips near the bottom corner.
  4. Fold the bottom corner over the filling, then fold in the sides and roll tightly toward the top corner.
  5. Brush the final corner with beaten egg to seal. Repeat with remaining wrappers.
  6. Preheat air fryer to 190°C (375°F).
  7. Spray the spring rolls generously with cooking spray on all sides.
  8. Arrange in the air fryer basket without touching and air fry for 10-12 minutes, turning halfway through, until deep golden brown and crispy.
  9. While the turon cook, whisk together ube halaya, condensed milk, and warm water until smooth and drizzleable.
  10. Remove turon from air fryer and immediately drizzle with ube sauce. Serve warm.
