  • 1/2 teaspoon amchur (dried mango powder)
  • 1 green chili, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons coconut oil, melted
  • 1/4 cup toasted coconut flakes
  • 2 tablespoons chili crisp oil
  • Fresh curry leaves, fried (optional)
  • Salt to taste

Rice paper isn't just for spring rolls. When air-fried, it becomes impossibly thin and crispy—like edible glass. This technique creates the lightest samosa you've ever experienced, with all the flavor and none of the heaviness.

Filling Preparation

  1. In a bowl, combine diced potatoes, peas, garam masala, cumin seeds, amchur, green chili, ginger, and salt. Mix well and let cool completely. Warm filling will tear the rice paper.

Wrapping Technique

  1. Fill a large shallow dish with warm water. Dip one rice paper wrapper for just 2-3 seconds—it should still be slightly stiff. Place on a clean, damp kitchen towel.
  2. Wait 30 seconds for the wrapper to become pliable. Place 2 tablespoons of filling in the lower third of the wrapper.
  3. Fold the bottom over the filling, fold in the sides, then roll tightly into a triangle or cylinder. The wrapper will seal itself.
  4. Brush with melted coconut oil. This is essential for crispness.

Air Frying

  1. Preheat air fryer to 375°F.
  2. Arrange samosas without touching. Air fry for 10-12 minutes, flipping halfway through, until deeply golden and crackling-crisp.
  3. While still hot, brush with a tiny bit more coconut oil.

Coconut-Chili Crunch

Mix toasted coconut flakes with chili crisp oil. Sprinkle this over the hot samosas, along with fried curry leaves if using. The coconut adds tropical sweetness that plays beautifully against the savory filling.

Textural revelation: These samosas actually crackle when you bite into them, then dissolve on your tongue. It's completely different from traditional fried samosas, yet somehow more addictive.
