  • 4 cups leftover cereal milk (from any sweetened cereal)
  • 2 cups arborio rice
  • 1 cup white wine
  • 1 onion, finely diced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup parmesan, grated
  • 1 cup crushed leftover cereal
  • Salt and pepper to taste

The Story & Steps

Save your cereal milk. It sounds absurd, but that's never stopped us before. Whether it's from corn flakes, honey nut clusters, or cinnamon squares, it's pre-flavored, slightly sweet liquid gold.

The Unlikely Method

  1. Heat your cereal milk in a pot and keep it warm on low heat.
  2. In a large pan, heat olive oil and 1 tablespoon butter. Sauté the onion until translucent.
  3. Add the rice and toast for 2 minutes, stirring constantly.
  4. Pour in the wine and stir until absorbed.
  5. Begin adding the warm cereal milk one ladle at a time, stirring frequently and allowing each addition to absorb before adding more.
  6. After about 20 minutes, when the rice is creamy and al dente, remove from heat.
  7. Stir in remaining butter and parmesan.
  8. Serve topped with crushed cereal for textural contrast.

The result is disorienting in the best way: savory risotto with whispers of sweetness and ghost notes of whatever cereal flavored the milk. Fruity Pebble milk creates something almost tropical; Cocoa Puffs milk heads in a mole direction. There are no rules here, only delicious confusion.
