  • 1 cup tapioca flour
  • 1/4 cup whole milk
  • 1/4 cup water
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

The Story & Steps

Pão de queijo is typically baked as individual rolls, but this adaptation transforms the dough into bite-sized croutons that deliver the same chewy-crispy duality in a more versatile format. The air fryer creates a golden crust while maintaining the characteristic cheesy interior.

Preparation

  1. In a small saucepan, combine milk, water, butter, and salt. Bring to a boil.
  2. Remove from heat and immediately add tapioca flour all at once. Stir vigorously until a dough forms and pulls away from the sides of the pan.
  3. Transfer dough to a bowl and let cool for 5 minutes.
  4. Add beaten egg to the dough and mix until fully incorporated.
  5. Stir in Parmesan, mozzarella, garlic powder, and smoked paprika. The dough will be sticky and stretchy.
  6. Using two spoons, portion the dough into small marble-sized pieces (about 1.5cm diameter).
  7. Preheat air fryer to 180°C (355°F).
  8. Arrange dough pieces in the air fryer basket with space between each, as they will puff up significantly.
  9. Air fry for 10-12 minutes until golden brown and crispy on the outside.
  10. Let cool for 5 minutes before serving. They're excellent warm or at room temperature.
