  • 2 green plantains, peeled and cut into 1.5-inch rounds
  • 1 teaspoon coarse salt
  • 1 cup fresh cilantro
  • 1/2 cup fresh parsley
  • 4 garlic cloves
  • 1 teaspoon ground cumin
  • 2 tablespoons white wine vinegar
  • 3 tablespoons olive oil
  • 1/4 cup water
  • 1/4 teaspoon red pepper flakes
  • Cooking spray

The Story & Steps

The genius of tostones lies in their double-cook method, and the air fryer executes this technique brilliantly. First cooking softens the plantain, smashing creates surface area, and the second blast achieves golden perfection.

Preparation

  1. Spray plantain rounds lightly with cooking spray and sprinkle with half the salt.
  2. Preheat air fryer to 380°F (193°C).
  3. Arrange plantain rounds in a single layer and air fry for 8 minutes until softened but not browned.
  4. Remove and let cool for 2 minutes until handleable.
  5. Using the bottom of a glass or tostonera, firmly press each round to about 1/4-inch thickness.
  6. Spray both sides of smashed plantains with cooking spray.
  7. Return to air fryer at 400°F (200°C) and cook for 7 minutes, flip, then cook another 6-7 minutes until edges are deeply golden and crispy.
  8. While second frying happens, blend cilantro, parsley, garlic, cumin, vinegar, olive oil, water, pepper flakes, and remaining salt until smooth.
  9. Season mojo verde to taste, adding more vinegar or salt as needed.

Serve tostones piping hot with the vibrant green sauce pooled alongside. The contrast of crispy, starchy plantain and bright, garlicky mojo is absolutely addictive.
